M&H Apex Dead Sea Whisky

M&H Apex Dead Sea is a limited edition single malt crafted by Milk & Honey Distillery in Tel Aviv and aged in the extreme climate of the En Gedi nature reserve, perched above the salty shores of the Dead Sea. Part of the distillery’s experimental Apex series, this small-batch release pushes the boundaries of whisky maturation.

Made from 100% malted barley—with a touch peated to 40 ppm—and double distilled in copper pot stills, this bold whisky matures in a complex blend of casks: 75% ex-bourbon, with contributions from STR wine casks, ex-red wine, ex-rye, ex-Pedro Ximénez sherry, and virgin oak. The result is a whisky that bears the mark of its intense surroundings: high heat, dry air, and an exceptional angel’s share.

Expect a captivating nose of dried fruit, rose petals, and gentle pipe smoke, leading to a savory palate with notes of sage, baking spice, and dark caramel. A long, mineral-rich finish carries hints of hibiscus flower. Non-chill filtered, bottled at 55.5% ABV, and Star-K Kosher Certified, this is a whisky as rare and remarkable as the land it comes from.
