Our traditional Tahona stone wheel gently extracts the agave's rich essence, preserving the plant's natural complexity that mechanical shredders destroy.

We ferment at exceptionally low temperatures using wine yeasts in tanks lined with American white oak and Mexican pine—a painstaking technique that most distilleries would never attempt.
