Del Maguey Mezcal San Pablo Ameyaltepec

A rare limited edition from the semi-tropical valleys of Puebla, this exceptional mezcal is the work of master distiller Aurelio Gonzalez Tobon—a craftsman whose dedication to tradition runs as deep as the earthen hornos where his agave corazones are roasted. Aged twelve to eighteen years before harvest, the piñas are slow-roasted underground, fermented open-air with wild ambient yeasts, and distilled just once through a resaque-style alembic still fitted with copper plates. The result is a spirit of extraordinary character: spicy carnation and lilac open on the nose, giving way to lush tropical fruit and crisp citrus. On the palate, it's creamy and soft—almost like fresh goat cheese—before closing with a long, mineral-rich finish that lingers beautifully. Puebla has been quietly distilling maguey spirits in remote villages for centuries, and its newly granted Denominacion de Origen makes this bottling all the more significant.
