Derrumbes Oaxaca Mezcal

Derrumbes Oaxaca captures the vibrant spirit of the Central Valleys, the heart of agave biodiversity. This full-bodied ensemble marries two iconic species—Espadín and Tobalá—crafted by third-generation Maestro Javier Mateo and his family in Santiago Matatlán. The production honors tradition, featuring black oak pit roasting and tahona grinding. Unique to this expression is a wild fermentation process aided by pulque and water sourced from the ancestral Zapotec town of Mitla. The result is a beautifully rounded mezcal where light smokiness balances seamlessly with crisp minerality and delicate fruit notes.
