Jabalí is a temperamental and challenging agave varietal, notorious for the foam (caused by naturally occurring saponins) generated during every stage of production. Its demanding process requires about 55 pounds of raw Jabalí agave to produce just one liter of mezcal, resulting in exceptionally low yields. For this Ancestral Limited Edition, only 100 liters were made, making it a truly rare collector's item.
