The Unexpected Birthplace of FEW Spirits
At first glance, Evanston, Illinois, might seem like an unlikely home for a distillery. This close-in suburb just north of Chicago was the birthplace of the temperance movement, the 19th-century American political and social movement that called for the abolition of alcohol. Prohibition started early and ended late in Evanston, with no booze being sold here for almost 115 years. Despite this history, Paul Hletko, the founder and president of FEW Spirits, turned the city's dry past into a lively future for craft distilling.
In 2011, Paul founded FEW in the heart of downtown Evanston, giving a cheeky nod to the initials of Frances Elizabeth Willard, one of Evanston’s staunchest temperance advocates. Today, FEW is known for its award-winning whiskeys and gins, made from grain to glass in their very own distillery.
The Art of Distillation at FEW Spirits
FEW Spirits uses two types of stills to create their unique products. A pot still with four plates is used for making whiskey, while a taller column still produces higher-proof, more neutral spirits that serve as the base for their acclaimed gins. Rye and bourbon are their best-selling whiskeys, but their creative spirit has led them to experiment with single malt, barrel-aged gin, and other innovative projects.
From the beginning, FEW Spirits has been a grain-to-glass distillery, mashing, fermenting, and distilling all their products themselves. This commitment to creativity and quality has made FEW a standout in the world of small batch spirits.
