A treasured gem in Philadelphia's cocktail history, this pre-Prohibition classic shone brightly during its heyday at the Bellevue-Stratford. However, like many beverages of that era, the Clover Club experienced a long period of obscurity throughout most of the 20th century. Clover Club Recipe
Ingredients:
  • 2 oz gin
  • 1 oz raspberry syrup
  • 3/4 oz lemon juice
  • 1 egg white
  • Fresh raspberries, for garnish
Directions:
  • Add all the ingredients except for the raspberries to a cocktail shaker filled with ice.
  • Shake vigorously for at least 15 seconds to emulsify the egg white.
  • Strain into a chilled cocktail glass.
  • Garnish with fresh raspberries.
