We age our whiskey in once-used bourbon barrels to protect the spicy flavor of the rye grain. Used cooperage imparts less tannin to the spirit, allowing more flavor to come through with less bitterness.
The finishing touch is Limousin Oak. one of the world’s most expensive cooperage. We blend 20-30 barrels to finish in our 16-barrel custom solera system of French Limousin Oak for 3-6 months.
