Old Elk Bourbon uses a couple of techniques in their process that make them stand out. First is chilled fermentation, and the other is a meticulous Slow Cut™ proofing process. Traditionally, this process takes 24-48 hours, but Old Elk shows this process to about two and a half weeks. They’re one of the only distilleries out there who has officially made this a part of the process. Their choice to extend the life of the proofing time to keep the liquid cool allows them to preserve and bottle every last drop of flavor.
